In discussing the structure of simple
sugars in Chapter 8 (Molecules), we saw that sugars are the simplest, most
essential storage mechanism for both Hydrogen and Hydro-Carbon building
material and immediate Hydrogen components "food". Depending upon the position
of the HCOH levers, sugars can be water attractive, or water repellent. |

Sugars can and do form long combinations known as
"polysaccharides". These are especially important as building materials for
cells. |

Three vital examples of complex sugars
(polysaccharides) are: |

| o Cellulose (body of plants) |
| o Starch (polys. of glucose in plants) |
| o Glycogen (polys. pf glucose in the human body). |
